Threw this together today. Did a little research and kinda customized it to my personal tastes. Came out very good. Everyone like it. It was a little hotter than I wanted but not too hot to eat. Here is how I did it.

15- roma tomatoes diced and seeded.
8-10- serrano peppers deveined and about 70% deseeded
1- habanero pepper deveined and deseeded and chopped
2- tomatillos, quartered
4 cloves of fresh garlic chopped
3/4 large white onion diced
1 bunch- cilantro chopped
1 lg can- stewed, roasted tomatos diced
4- limes using juice only
salt to taste


Blended up to desired consistency and chilled to serve.

might want to swap out with some other peppers or use less serrano's

Looks Great! Try a couple of shakes of cumin next time, too. Gives sauce a great depth.

That looks like some good stuff. I have about 30 pepper plants and have been doing a lot of different sauces and salsa's this year. My Habenero plants really produced this year.
For a different type of salsa try substituting carrots for the tomatoes. Use some Jalepeno's, some Serrano's and a couple of Habenero's. Blanch the carrots and onion for a little bit then add the peppers for about a minuite. Pour those in the blender with the other ingredients. I use lime juice, celantro, a little lemon tyme, sea salt, a dash of pepper, a touch of honey. some garlic cloves and a dash of cider vinegar. Chop and blend to your desired consistancy and add as you taste to make it as spicy or sweet as you want. My family members love this for dipping chips or adding as a base for other dishes. It is a great alternate to the standard tomato salsa.

If you want an easy one for the fire house, use this. I use it for my cooking class with students and it comes out good everytime.

1 lg. can petite diced tomatoes
1 can Rotels chili fixins
1 med sweet onion
4-8 jalapenos (cut out the membrane and seeds)
1 lime squeezed
a little seasoned salt
3 T. sugar

Dice onion and jalapenos and add tomatoes and rotel. Squeeze lime over mixture then add salt and sugar. If you want it less chunky, place in a blender but only pulse it 3-4 times on quick burst.

The students freak out when I say to add sugar, but it makes a hot salsa mellow to a medium and still retain the jalapeno flavor

I used to make a great pico de gallo, till I got hold of some bad Cilantro and wound up sick for a week. I like you salsa recipe, but I think I would put it on the stove and heat it up to low boil for 1o minutes. Hot salsa eats just as good!

simmer on low covered for about 15 minutes. gives it a whole new taste. AWESOME

I can't stand Cilantro. I think it must have grown wild in Dads back yard. It smells exactly like the weeds I had to mow down all summer long every year.

Smash up some avocados, and make some guacamole with about a 50/50 mixture if it's too hot for some people.

Sound good. Try roasting the tomatos and pepper over the bbq grill before you blend....

I normally throw a can of the fire roasted tomatos in it. Beats firing up the pit.
