I've eaten bass, crapie, perch, catfish, whitebass all with the skin on deep fried. I eat the skin and all. It's great, no lie. Try it, it's better than you might think! Just filet them like normal except leave the skin on, then deep frie with your favorite batter and you're good to go!!

Say HAWG, did you mean that you had skin on one side of the filet? Yeah, all of them taste great deep fried. Thanks for you recipe. Skin those little cats and fry them whole. Filet or steak your bigger cats or I won't be over to GH to eat at your next fish fry.

Yes, scrap the scales of the skin with a steak knife or your filet knife until they are all gone. Pretty easy to do! Then filet it and leave the smooth skin on one side of the filet. Batter it up, deep friy, enjoy!!!
I take back what I said about the catfish though. Never tried it. It's pretty easy to pull their skin off with some pliers. Or just filet it off.
