I've had about the same results from both but beef does stay on the hook better without pantyhose. I think it's more important how fresh it is and how much blood it still holds. I've caught many a fish on the prior catch's liver.
Now, for eating, I have no preference. I'd eat a water moccasin's liver if it was cooked right. I've tried chicken liver both without pantyhose and with. The fact that I was wearing pantyhose didn't seem to make any difference in how well it stayed on the hook. Maybe I should have tried the control top kind.

ive always used chicken liver but this year im gonna try some deer liver. as far as panty hose well i wont go there

Chicken livers always worked best for me. During the summer, I used to let them dehydrate in the sun. They were tougher, and stayed on the hook better. You can also cover them with sugar for more toughness, but that sure makes them messy. Back in the 1970's, you could buy jackrabbit livers, and they seemed to work better than either chicken or beef liver.

I'm waiting on an order of Rippin Lips catfish bait--liver based, stays on the hook, leaves a good trail. It's been getting good reviews. Anyone tried it out?
