I've been out with many guides before and the best guide I've ever been out with just happens to be a Lake Fork guide. Go with Stephen Fatheree (mylakeforkguide.com) you won't be disappointed. He has some great videos on his website as well.

I spend most of my time in deep water in the Fall. I started off shallow this morning, but found them in 23 ft around 11AM.
