My kids and I just ate a nice mess of white bass and my gosh they were good. I just had to share the joy with you guys/gals that may still have some in your freezer. I guess I'm going to have to go catch some more. Darn!!!

Yer, makin me hungry Lowe Rider. I used to not like SandBass, but I saw a post on here about bleeding them out as soon as you catch them. I kept ten on Sunday and did the bleeding thing to eight of them. That meat was as good as Crappie, and came out the same color after cleaning. You could pick out the filets that were from the two fish that I didn't bleed from across the room.

I found a nice idea on a website about a method of freezing that takes almost all of the "funny" taste out of the fish.
It said to put a tablespoon or a little more of salt into some water. I usually just dump some salt into a big cup and fill it with water to put into several bags. Mix it thoroughly and add to your freezer bag for storage. After you thaw the fish soak them in water before frying them up in your chosen manner. My wife will not normally eat fish because of the fishy taste. But even she says this works. I can definately tell the difference.
I've never done the bleeding thing. I'm usually too busy catching fish to waste time doing that.

after you filet them put the filets in a bucket and use a water hose with a nozzle to -boil- the fish until that oily film stops forming on top. roll the filets in stone ground cornmeal, I like to add some salt and cayenne pepper to the meal. fry them in hot peanut oil. talk about good....make you slap yo mama.

Vaughn, I've been doing the bleeding since last year and I agree, it's great. I found kitchen type, short blade scissors work best. Just clip a gill or two and put it back in the live well. Very quick and easy and safer than a knife. It makes less mess when you fillet and tastes better. I also take the blood line out on stripers, hybrids and large sandies and that also reduces any strong taste.

Miguel, I use something like that, I found some gardening scissors and just clip the gills on one side and pop them in the well until I have a few then I transfer the belly up ones to ice. It only takes about 10 extra seconds per fish. I also do the bucket rinse thing and a twenty minute soak in salt water before going in the grease. I'm going to have to hit Lewisville in the morning, I feel another Sunday evening fish fry coming on.

I can't really agree with this adding salt to the water you want to freeze those filets in.
This would lower the freezing point of the water and I can't really see where this would be to your advantage?? If you want to soak them in salt water for a while prior to freezing maybe, then freeze them in fresh water.
Invest in a vaccum packer and you won't complain. I just make sure I trim the filets until they are pure white....None of that funky brownish looking blood vein on the outside remaining before I pat them dry and put them in the vaccum backs.
Keeps them fresh, and there is no easier way to thaw them but simply place your dry frozen filets still in the vaccum bag into a sink of warm water.
They are ready to start cooking in thirty minutes, and fresh as the day you dressed and packed them.

Wahoo, I agree. I just wish that when I went to the coast somebody besides me could catch fish. By the way, when are we going again? We need to show those Hart guys how to catch fish again.

White bass are great. I've never noticed any "funny" taste to them. I don't bother bleeding them, or trimming the red meat off. The fillets are too small to waste anything lol.
I just wash the fillets really well after they are cleaned, and they taste great any way I cook them!

I agree with Starless here, it doesn't matter how you prepare or cook them Whites taste great. Catch them on an ultra-lite rig or a fly rod and they get even better!
