I like channel cat as well but that's just cuz when I'm fishing for blues I'm going big and sport. I like small cats to eat so a nice stringer of channel cat works for me but I'll eat any of them!

i think the best way to answer this would be for you to fry up 25 lbs. of channel filets and 25 lbs. of blue filets and invite us all over for a blind taste test. and while the grease is hot go ahead and fry up some taters. oysters would be a good palet cleanser. just my thought. hope it helps.

Some channels can get a bit gamey, but I'm STUCK on the blues out of my home lake here at Canyon. They are basically a pallet because they have almost no aftertaste. My fishing buddy loves the channels out of Cally, though. Personal preference.

I like channels and blues equally. Stone ground corn meal makes them really crispy. I have to say I like flatheads as well. I always heard they were gamey but I fried one up one time and it was great.

"I rake the meat off the bones to get bonelass straps. Then I slice big wafer steaks off of the top (back) straps. I also already trim the red olfactory gland off before I do that."
I don't know what any of this means. Please elaborate.

Yellows, then crappie, then small blues then channels. When the blues or cahnnels get big enough to be bloody its throwback time to me, to much waste and trimming, and I am lazy

+1 on cleaning all the red meat off, slice them thin, then roll it in Louisianna Fish Fry (Blue Bag-Seasoned), and they are all good, Flatheads, Blue's, and Channel's in that order, but they are all good!!!
