Here is best way I have found to get rid of the red meat on Hybrids and Stripers. Enjoy!

On step # 1.. if you get the fillets nice and cold (soak them in ice water for 30 minutes to an hour)... it firms up the fillet alot so it's easier to fillet off that red meat : )
