Hello, I need an alternative way to prepare catfish than frying. The person I'm cooking for "doesn't think they like catfish" but I want to prove them wrong. Thanks.

Blackened on an outdoor grill. Dip the fillets in melted butter and coat both sides with Blackened seasoning. Put a griddle on the grill and place the fillets on the hot griddle. This smokes like crazy so don't try it in the house without an industrial vent hood.
If they don't like spicy, just clean all the dark meat off the skin side and soak those fillets in some salted lemon water. Just salty enough that you can taste it and just enough lemmon so you can taste it. Give them 1 hour in that then grill with a basting of olive oil, some Greek seasoning and a squirt of lemon. Serve that with some rice pilaf, and a salad. Mighty fine light summer food!

marinate in "Dales" steak seasoning for an hour or two and grill over charcoal in a grilling basket! dribble with lime juice when almost done. serve with tarter sauce or cocktail sauce......ummummgood

grilled over an open flame marinating however you want i prefer lemon pepper blackened or similir type seasonings
 fish to live and live to fish

Catfish Ceviche
Ingredients 1 pound Fresh caught catfish fillets, cut into 1/2-inch pieces 1 teaspoon grapefruit zest 1 teaspoon lime zest 1/2 cup freshly squeezed grapefruit juice 1/3 cup freshly squeezed lime juice 1 medium tomato, seeded and diced 1 small red onion, finely diced 2 tablespoons extra-virgin olive oil 4 cloves garlic, thinly sliced 1 jalapeno, seeded and minced 1 tablespoon chopped fresh cilantro leaves 1 tablespoon chopped fresh oregano leaves 1 1/2 teaspoons kosher salt 1/2 teaspoon sugar 1/2 teaspoon toasted and ground cumin 1 avocado, pitted, peeled and diced Directions Put the catfish, grapefruit zest, lime zest, grapefruit juice, and lime juice into a large resealable bag. Put the bag into a leak-proof container and refrigerate for 4 to 8 hours, turning 2 to 3 times, during this time, to evenly distribute the marinade.
Drain the marinade and put the fish into a large serving bowl. Add the tomato, onion, olive oil, garlic, jalapeno, cilantro, oregano, salt, sugar, cumin, and avocado and stir gently to combine. Cover and refrigerate for 30 minutes prior to serving.

Here are a couple of my recipes: Put your fish in a foil pack with salsa grill or bake untill the fish flakes .
Grill it with garlic salt & Tony Chachere's Creole seasoning right before you pull it of the grill cover the top with some Lea&Perrins Worchestershire sauce.
Of course these all taste better over a camp fire with catfish you just caught .If the person eating does not like a fishy taste cut the lateral line and any dark meat from the fish.Enjoy

+1 blackened on a cast iron skillet on an OUTDOOR grill.
doesnt really matter what you spice it with. I cooked some last night this way. 1/2 I used a general seafood dry rub for seasoning, the other 1/2 I used bbq dry rub. both were good.

Ceviche is GREAT!!!!
Another great recipe for any fillet is what I use on specled trout and reds at the coast..
disposable aluminum foil pan, like for a turker or cake put a large box of instant rice in it, lay fillet's on rice and spread a layer of butter on on top, squeeze one lemon per 4 fillets on top and then put some lemon slices and orange slices on top for color. I personally season with salt, pepper and a little Zataran's and then wrap with aluminum foil. On grille cook for about 30 minutes on low (hot grille) or in oven for about 45 minutes at 350. MMMMMMMMM delicous! I serve it with fresh steamed zuccine, squash and esparagus. Great delicous and healthy meal. Well except fo all the butter LOL.

Find a snapper vera cruz recipe you think looks good and use catfish fillets instead. I have one I am still working on. Fillets in baking pan, season to your taste, cover with sliced onions and diced/sliced peppers (your choice-I like bell). I add other vegetables sometimes but usually just use squash. I cover it all in spicy V8 juice and bake it till done. Serve with rice.
