My mama don't like fried fish.

But somehow, she likes fish tacos from the restaurants. In an attempt to have her enjoy the fish that we catch, we made crappie tacos.

I made them baked and fried, both with similar recipes. Surprisingly, mama liked the fried ones better.

Here are the recipes:

Fish...

Ingredients for frying:

1.5 cups masa(unseasoned corn flour)
1 tblsp cumin
1.5 tsp salt
1 tsp pepper
1 tsp chili powder
1 tsp garlic powder
1/2 tsp onion powder

Coat 'em and fry em, your favorite way and temp(we do 380).

Toppings: Pico de Gallo, Sour Cream, Mexican Table Cream(or ranch dressing), shredded cabbage. and shredded cheese.

Pico Recipe:

1-2 jalapeno peppers
3 big tomatoes (or 4 medium)
1 medium white onion
1/4 "bunch" cilantro(brookshire's bundle)
1 tsp. salt
1/2 tsp. pepper
1/2 baby lime(the juice)

Cut out the membrame of the jalapeno pepper(s) and discard the seeds(If you are cooking for men only, leave membrane and seeds). Chop finely. Dice tomatoes and onion, discarding the onion heart. Pull the leaves from the 1/4 bundle of cilantro and chop into smaller pieces than the onion. Add them all together, spread the salt, pepper, and lime. Stir it up.

For prepping the tacos:

Use your favorite tortillas and combine it just like you would fajita chicken or beef tacos, with all the ingredients listed above!

I would have taken pics, but I was too hungry at that point to remember that I might put this online.

My wife won't eat fried, so I season with lemon pepper, and old bay. Take teflon skillet and spray with pam and pan sear. It's SO GOOD!!!

we do blackened catfish tacos alot...put a gridle on the grill
add some oil and chopped onions
grill till soft and brownish
clean gridle and let it heat up 6-8 min
fish has already had the blackened spice on for 30 min
put a lil oil on the gridle and add fish
cook for about 2min a side till fish will flake
make a taco... lettuce,tomato,grilled onion,cheese
this is why i like big cats, crappie may not be thick enough...if you want a good crappie dish try slab me sillys crappie lasagna....it rocks

All sounds good. Crappie cakes are also yummie if you like crabcakes. Find a Maryland crabcake recipe you like and use crappie. I tweaked mine with some cajun spices. Boil the crappie drain it. Put it in the fridge till it chills. Best if done over night. I make a bunch when I do it and freeze the extras. Top with some Remoulade sauce.
