I cut some major corners. I just brown about half an onion in a little oil with 1 clove of garlic. I put a couple of slices of bacon in that I have chopped and when its almost done I add the yellars (about 6 fillets diced). Once you feel comfortable with everything being cooked add enough cream to cover it. Salt and Pepper, a glass of vino and viola!
I followed the clam chowder recipes the first few times then took note of what I could actually taste. I eliminated the ingrediants I couldnt identify and BAM! My wife loves it.
Dont forget its another low carb meal.
Another recipe is called yellow bass dog food, hahahaha. My puppies eat it up gooooooood.

If you like it a bit thinner then you can add either some clam juice or chicken broth. Half a cup of chopped celery is also a nice addition to any fish chowder. Gives it a sweetness. Corn is used for this in salmon chowder but for those of us on the low carb way it is a no no. One more thing if you want some substitue for potatoes that are traditional for chowder and you want to keep it low carb then get some Dreamfields Penne Pasta (5 grams a serving) cook it in water seperate and cut the penne into small bite size chunks then add to the chowder right before you eat it. Gives back that starch missing from the potatoes being omitted from a traditonal new england chowder. You know me Howell I have to screw with and add to or alter everything. Seriously though try the Dreamfields Pasta available at Albersons and Kroger. It kicks butt, by the way I have dropped another 5 pounds off my butt! Thanks to keeping it low carb

Yes Jack, you have to alter everything but those are good recomendations. Celery does make it better tasting. I skip the taters due to the carbs and lack of taste they have.
To each his own, you have to eat it.
Tonight we are having sandchiladas, cross your fingers!

Howell,
Try the Dreamfields Pasta it kick serious butt. May be not for chowder but for any use. You won't belive it is low carb.
