I have a great recipe for rolls-I think from kattielyn.Taist is great.Sometime they dont rise the first time-nearlly always are heavy.Tast as good as dickies bar b q--But are so heavy--Any help appreciated.--thanks mike

I have her yeast roll recipe too,man they are good with butter ,i cant just stop at one or two ,they are great.

To speak of such rolls and not post the recipe should be worthy of the WOS for at least two months.

Hard to say. Could be bad yeast, or you could be letting them rise in a draft or cooler environment. I usually put stuff i need to rise in the oven with the light on but no heat. The light usually emits enough heat to help the dough rise. The water for the yeast has to be warm enough as well. As always grease the sides of the bowl your letting them rise in with Pam spray or oil of some sort.

And whatever you do, do not, I repeat do not, PM me the recipe.

Mike, sweetie, #1 cover loosely with oiled plastic wrap. You're most likely letting the dough get too dry.

I normally have the dough rising on top of the dryer while I'm doing laundry... just ambient heat works great. I really don't worry about heat too much unless the general temperature in the house is cold.

Quick rise yeast. Man I wish I could show you what I do..... Mine turn out soft and fluffy every time.... and I'm gonna have to dig for the recipe.

1/2 c water
1/2 c half-and-half or milk
1/2 c butter
melt the butter, and warm the milk and the water to about skin temp. add 1 package of yeast and let it sit for about 5 minutes to dissolve.
1 tsp salt
2 Tablespoon sugar
1 egg
Beat well together, then add in going a half cup at a time
3 and 1/2 c flour

knead about 5 min, making sure its all combined well, and turn into an oiled bowl making sure the dough is well coated, then cover loosely with plastic wrap and let rise about an hour.

Divide into 24 pieces, roll into balls, then kinda crowd them into 2 greased baking sheets. Cover with the plastic wrap and let rise another hour.

Bake 10 - 12 min at 375

Thanks Katte ive been warming the oven to about 80-90 spraying the oven and cover with towel.Ill try the oil paper--thanks again

Don't use a towel sweetheart. That's where you're messing up! Use plastic wrap (saran wrap)

Katte also i tried splenda instead of sugar--dont think that yeast liked that-whatca thank-& thanks for the towel tip.

Yeast is a living thing. It eats the sugar and that's how it makes your bread rise. Feeding it splenda means the yeast doesn't have anything to eat.
