After 1hr of trying to cut thru the leather skin, we finally got to the meat where we were faced with a billion splinterlike bones. Took a taste of the meat and it tasted like a cat's a@ss

i caught one a few year back, my guess would be 8 to 10lb. I give it to my neighbor, she end up filleting the fish and she said it was good eating. but then again she think drum and carp are really good eating too. so i dont know

Longnose gar are good, alligator gar-not so much. Once you chop the head off said gar with a hatchet or axe, cut down the belly with a sharp knife and then skin the gar out of it's "shell". Once removed form it's armor, there are two long strips of meat running along the backbone. Remove these backstraps, as this is what you want to eat, and throw the rest away. Wrap them in foil with wishbone Italian dressing, butter, lemon juice, chopped onions, peppers and a few strips of bacon. Cook it on the grill until the meat is done. It has the consistency of chicken breast, unlike most other fish.
