To answer your original question, Smallmouth Buffalo make fantastic eating. They're a bit bony, but eating around or cleaning around the ribs will provide some delicious meat.
Or they can be pressure cooked and then none of them bones matter any more lol.
I've eaten them fried, grilled, and smoked, yum. I actually fried up some chunks alongside white bass and catfish, had a little multi fish platter lol. Good stuff.

As I've said before, the meat looks pretty good. Very white. I guess I'll just have to get over the fact it's a buffalo.
