I cleaned 32 whites Tues around 10 pm. I have kept them on ice in the fridge. This may be a stupid question, but are they still good to cook tonight?

Yes, all ya need is cornmeal & hot grease.
Personal best : Freshwater Red - 26.11lb. Striper - 15lb. Black- 7lb.

I'm going to try soaking them in 7-up. I heard that It will take the lake taste out of the fish. I then coat them with yellow mustard and use cajun seasoned cornmeal. My wife uses that method with catfish and it couldn't get any better than that.

Cooked up about 70 fillets last night for a fry. Did nothing other than trip a little red on the back side of the fillet.
Tasted great, no fishy taste and soaked it in NOTHING!!!
I did spice up the cornmeal with a little salt&peppper with a little lemon-pepper....

Chuck, sorry to be the bearer of bad news but those fillets are spoiled and it just so happens I'm in the business of waste disposal and if you'll send me the pertinent info I'll come by and pick up the spoiled fish. Please the corn meal and peanut oil you planned on using available:-)

My Mom and Mom-in-law said they have never had better. Do you filet your catch? The skin will add a little flavor (yuck) but fresh filets are just about as good as it gets. Zero fishy taste.

That is how I like to cook my fish. And yes, I clean my own. I'm not crazy for fish anyway. I love to catch them, but I had an experience with bad fish, and I have a phobia of it. Do what you like to yours, I'm just telling how I like to fix it. Eat it raw, I really don't care. The 7-Up really takes any lake taste out of ANY fish. This really works for catfish. The mustard trick I learned from a chef friend of mine. I don't know what it does, but it makes the fish taste better. Now I want to eat fish at least once a week. If we wanted to eat fish, we would go to the Duck Inn in Lake Dallas. Great whole catfish, but nothing like what my wife makes. Like I said, cook your fish how you like, but you don't know what your missing!

ChuckH,gj toombs how long do ya'll leave the fillets in the 7-up before you add the mustard. I take it that ya'll leave the mustard on to help season & maybe helps the cornmeal stay on better,then you fry.

I saw on the Outdoor channel this week a lady took bacon grease and got it good and hot in a skillet. She cooked one big filet and WOW  it looked good . She soaked it in milk then had corn meal and flour mixed 50/50 and some salt and pepper. Then in the skillet it went. I will try this next time I cook some fish.

There is little or no reason to soak fresh sandbass in anything. Just fry 'em up any way you would any other time. A jillion ways to do it. However, most of us try to leave that dark colored meat behind while fileting our fish. Just turn your knife up a bit when fileting the meat off of the skin. It is the only fishy part of the filet, the rest is fabulous. You'll only have one thin dark strip left after that. The rest will white light and incredible. I may just have to go home and fry some up.
