Any smaller fish works. Those Black Saltys are good. Now the bigger the bait the better. Say 7-9" and if it is legal a bluegill hooked thru the top just under the fin is like candy to Stripers. In NM bluegill is legal but you have to catch them by rod/reel. A 14" gizzard shad is great for a 30-40# and up striper. A 9" brooder or whatever will catch you a 10# and up fish.

large minnows do work for stripers . caught a nice striper on Granbury in striper alley using large minnow . good luck
If I'm lucky I'll die with a 7' spinning rod in my hand.
