I have tasted meat from flat heads all the way up to 77 pounds, and blue cats all the way up to 65. Have tasted the meat from a 24 pound channel cat. They all tasted like the smaller versions, except they had larger flakes of meat.
I chuckle every time someone mentions the meat of larger catfish tasting bad, it is usually a sign that they have never actually eaten one.

I chuckle every time someone mentions the meat of larger catfish tasting bad, it is usually a sign that they have never actually eaten one.
Or actually CAUGHT one!!

Just another point of view is that the longer a fish is alive, the longer the flesh absorbs chemicals in the water. One of the worst is mercury. There are others. I could mention many reasons to release the bigger fish but that is the one that does scare me in regards to my health. Food for thought!

Never ate a blue before. Does it taste the same as a channel? I actually prefer the Blue's to the channels. But the bigger the better!! The bigger ones should be put back though to reproduce and make some bigger babies

Now this IS a concern, especially in areas where industrial runoff and farm runoff flow into the fished water body.

I fed a whole bunch of folks on the large fish in my Signature. The only blessing to that was I could yield more fish with less cutting by filleting the big ones. I typically don't keep the large ones as I have a small family and don't need to clean a 20lb fish to feed me and 3 others.

I always tell my kids, "it only takes one to fill the freezer." Biggest one I caught was a 83 lb yellowcat. To me the big yellowcats or flatheads skin easier then the big blues. I grew up fishing the San Gabriel River and the Little River. My family fished to fill the freezer. The bigger the better. It all taste the same.

Which lakes should I be aware of as far as mercury goes? I've mostly fished Grapevine and just recently tried out Benbrook lake since moving to Burleson.

I normally only keep the 5-6lbs and under to eat, but last year I cleaned a deep hooked 29 lb. blue and it tasted great. Just hard to clean.

Food for thought! theres one problem with the theory that all big fish have more toxins that is completely false big fish get big fast its been scientifically proven that a 10lb catfish could be any where from 3-20 years old the biggest and trophy class fish are actually usually some of the younger fish their genes just allowed them to get that size much quicker than some others i wanna say splash was 18y/o when he died at the athens aquarium
