I was out on Ray Roberts a week and a half back, and forgot the GPS, so fished without it, but was unable to find one of the brushpiles I was looking for. It got me thinking, could I have used the car GPS in the boat to give me latitude/longitude? Of course, I thought of this in the boat...

If you can remember the numbers, it will work. The long. and lat. are the same no matter what type of GPS you are using.

I use my car GPS for a backup. Of course it's an XOG and is somewhat ok to get wet so... I store all my locations for my rush on both my boat GPS and my XOG. Anytime I find a pile I just mark it down on both so that way if I go out with some friends in their boat I just take mine along. Don't know what type of car GPS you have but it should have the longitude and lattitudes on it I am sure and if it does, just make sure you store your pile locations on it. If it's not waterproof, I would stick it in a ziptop bag.

Are you entering degrees and maybe your Car GPS is set for minutes.seconds or vice versa?

Somethings not right here. Either the wrong format or datum. Latitude and longitude should be at the same location, given all else is equal.
