I only catch the BIG crappie and they are way too BIG for the skillet so I HAVE to fillet.

Fillet with one exception. Have you ever tried grillin a crappie fillet? If im going to grill a crappie I scale and gut the fish, rub it down with peanut oil, season it and put it on the grill whole. With the head still on. That way I can stare him down while I pick em apart. Yummy! cheers

I remember scaling white perch (crappie) with a spoon when I was around 8 or 9 years old as my Dad cut the heads off and gutted them. I also remember scaling machines at the marinas, they looked like big washing machines to me at my young age. But back then, we kept everything, regardless of size, so scaling was the way to go. Now, with the electric knife and size limit, I wouldn't think of anything but FILET. With the exception of bream. My mother still loves to eat pan-fried bream, and so do I.

I prefer to fillet. My wife, however, scales and guts. Ever seen a hungry Korean chef lady go through a pile of Crappie? Time I get the filet stuff outside the fish are finished...darn shame...hehehe hammer

We just drop fried a bunch of scaled crappie out of the freezer and I won't do that again. I am not going to keep a crappie any more that I won't fillet. Fillets are more tender and just taste better.
When I was a kid, we pan fried scaled crappie and was happy with it, but after eating fillets, that is just the best way to go, no matter which way is the easiest.
I can't wait to smell up my new Lund live wells when I get it. banana

My mother, she is in her mid 70's, likes for me to bring her 3 or 4 10 inchers so she can gut em, scale em and fry em whole. She says they taste better with the bones in em. I like em either way, but filleted is the way to go in my opinion.
