These are great! One thing I do is wrap the bacon over the top and bottom instead of the side (like a filet) so that the bacon is over the fire (I grill them) when they are cooked. It seems to cook the bacon better.


Another good trick is to heat bacon strips on a wire rack over a sheet pan for a few minutes in a 300 degree oven. Remove from oven after the bacon renders a bit but before it crisps. When it is cool enough to handle, wrap your scallops, dove breasts, or other favorite meat in the bacon and throw on the grill. Really helps browning the bacon without overcooking the seafood or game inside.
