I'm not sure what all my wife puts in her version but I do know it went from a great dish to something sublime after she started using smoked chicken.

Try this:

KING RANCH CHICKEN

1 large chicken, stewed, skinned, boned and cut into bite-size pieces.

1 large onion and bell pepper, chopped

10 tortillas

Hot chicken stock (from stewing the chicken)

lb. of grated cheddar cheese

1 teaspoons of chili powder and garlic; and salt to taste

1 (10-ounce) can of each of the following: condensed cream of chicken soup and condensed cream of mushroom soup

1 (10 ounce) can of tomatoes with green chilies, crushed

Preheat oven to 350 degrees. In a large bowl, combine chicken pieces, onion and green pepper. Dip tortillas in hot stock long enough to soften them.

In a shallow 3-quart buttered casserole, layer chicken mixture and tortillas alternately, beginning with the chicken and ending with the tortillas. Top with cheese and sprinkle with chili powder and garlic salt. Add chicken soup, then mushroom soup, then tomatoes. Bake 30 tp 45 minutes. Makes 8 to 10 servings

This looks about like the above recipe. I found it saved on the computer. We haven't made it in a while. I do remember it being pretty good though.

King Ranch Chicken

1 chicken boiled and de-boned
1 lg onion
1 can mushroom soup
1 can cream of chicken soup
1 can Rotel
Garlic powder
lb. grated Cheddar
Flour Tortillas
1 can chicken broth
Salt to taste

Saut onion in cup butter. Add soups, Rotel, chicken, garlic powder, chicken broth, and most of the cheese reserving some for top. Line 9x13 pan with tortillas. Pour mixture over tortillas. Bake at 325 for 30 minutes. Remove from oven and add remaining cheese, but back in oven until cheese is melted.

I did not know the King Ranch ever raised any chickens...
I was told they only ever raised cattle and hard working Mexicans.

King Ranch Chicken Casserole

Ingredients:
1 cooked 2 1/2 pound fryer (cooked with cumin, onion, celery and garlic) shredded
10 corn tortillas
1 onion, chopped
1 bell pepper, seeds and stem removed, diced
2 cups of grated cheddar cheese
1 can of cream of mushroom soup
1 can of cream of chicken soup
1 cup of chicken broth
1 can of Ro-Tel tomatoes
1 tsp. of chile powder

Method:
1. Preheat oven to 350 degrees.
2. Combine soups, broth, Ro-Tel tomatoes and chile powder; blend until smooth.
3. Place a layer of chicken in a greased casserole dish.
4. Add layers of tortillas, onion, bell peppers, cheese and sauce.
5. Repeat layers, ending with cheese.
6. Bake uncovered for half an hour or until brown and bubbling.

Here is my wife's King Ranch Chicken recipe. It's a little different.

Cooked boneless, skinless chicken breast (cooked in crock pot all day or boiled until done...KEEP THE BROTH!)
1 can rotel
1 can cream of mushroom
1 can cream of chicken
Shredded Cheese
Tortilla chips (they can be older)

Pull apart or dice up your chicken, however you prefer. Mix together the rotel, cream of mushroom, cream of chicken, and about 1 cup or so of shredded cheese. Add small amounts of broth at a time to thin out the mixture. It shouldn't take more than a cup. Add the chicken and mix all together.

Crush up the tortilla chips and put them in the bottom of your baking dish. Moisten them with some of the broth that you saved. It keeps them from getting too hard when baking. Pour the mixture onto the chips and disperse it evenly. Cover with foil and bake 30 - 45 minutes at 350 degrees. The last 5 minutes cover the top with shredded cheese and allow to melt.

Just a little hint. If the casserole is bubbly at the bottom it's done.

I use basically the same recipe as TexCwby but I use corn tortillas torn into bits (I use no broth) and I use 2 cans rotel. I always boil my chicken breasts and use a slap chop (yes, THE slap chop) to kind of chop up the chicken. I am the queen of easy cooking. I use at least 3 big breasts. I like casserole meaty. If I only use 1 can of rotel I will add chili powder to the mix, I like it spicy. It's so easy and yummy.
