How do ya'll store your fish? I put them in a baggie with water and freeze until ready for the family fish fry. I have a food storage device that sucks all the air out but haven't used it for fish yet. Think it's okay?

I use to freeze my fillets in bags of water but not since I got a vacuum sealer. Vacuum sealing is the only way I'll do it now...

Vacuum packing is the way to go. We also buy large faimly packs of meat and make dinner size packs out of them to freeze.

If you vaccum pack it, stick the filets in the freezer on a cookie sheet so that they form a lite ice glaze over them. Then vaccum pack them. Doing that will prevent the water/fish juice from being sucked into the vaccum pump and giving your nose a workover the next time you use the machine.

Instead of a quick freeze which may not always be handy, you can fold up a paper towel and put it in the top part of the bag before you seal it and it will stop the juices from entering you sealer. This seems to work really well for me.

I have a sealer, but it does not seem to get a good seal. Is the plastic tight on the meat after the vacum process or is it a little loose?

It should be fairly tight.
I have noticed that I have the same problem if I put to much in a bag and cause it to be "thick".
My sealer does better if there is only a single layer of fish.

Fillets wrapped up in Saran wrap, like rolling up a sleeping blanket. They are easy to unroll and defrost quick.
