Here is one of my favorite meals during the summer. It is pretty simply but good. It consists of tilapia, asparagus, onions, and some sort of flavored rice. I like to use olive oil, sea salt, course black pepper, and lemon pepper.
Start the rice first so it will be done when the stuff on the grill is done. The asparagus goes in the sink with cool water to wash and trim the ends to get the tuff base off. The onions get a wash and trim also. The tilapia filets are just the store bought individual filets. Sprinkle olive oil on them first then the salt and pepper. I put the greens on first for about 5 min. to give them a head start. Then the fish go on for about 5min on each side with lemon pepper on each side.
Cook the fish till it flakes with a fork and the greens look a little wilted if you like them to still have a little crunch to them. I like to drink a tall cold glass of sweet tea with it.
