Pineapple Upside-Down Cake Homemade Pineapple Upside-Down Cake is so good and so pretty. It's special enough for company, but quick enough for just the family. 1/4 cup butter 1 cup firmly packed brown sugar 3/4 cup chopped pecans 20-ounce can of pineapple slices, drained, reserving 5 tablespoons juice 3 eggs, separated 1 cup sugar 1 cup all-purpose flour 1 teaspoon baking powder 1/2 teaspoon salt maraschino cherries Preheat oven to 350F.
Melt the butter in a 9-inch cast iron skillet. Add the brown sugar and pecans; stir well to thoroughly combine, then turn off the heat -- don't cook it. Arrange 8 pineapple slices in a single layer over the brown sugar mixture (your 9-inch skillet should accommodate 8 slices without overlapping). Set the skillet aside.
Combine the flour, baking powder and salt in a bowl; set aside.
Beat the egg yolks at medium speed until they are thick and lemon colored. Gradually add the sugar, continuing to beat. Add the flour mixture to the yolk mixture, and stir in the reserved pineapple juice.
Beat the egg whites until stiff peaks form. Fold the whites into the cake batter. Pour or spoon the batter evenly over the pineapple slices.
Bake at 350F for 40 to 45 minutes. Cool the cake in the skillet for 30 minutes then invert it onto a serving plate. Place a maraschino cherry in the center of each pineapple ring.

I'm just finishing a homemade one that my wife made me for Father's Day. Got one slice left and is it ever gooodddd!!!

PINEAPPLE UPSIDE DOWN CAKE Printed from COOKS.COM

2/3 cup butter 3/4 cup brown sugar
Place the butter and brown sugar in a frying pan and melt until it boils or bubbles. A cast iron pan works well because it's heavy and will be less likely to scorch.
1 can pineapple slices maraschino cherries (enough to fill centers of pineapples)
Place pineapples in the butter and sugar mixture. Put cherries in the center of the pineapple. Cut the slices of pineapple into halves and line the sides of the frying pan with them (standing up on edge). Prepare a box of yellow cake mix following the directions on the box to mix the batter (do not bake in a separate pan; follow instructions below).
Pour the batter over the pineapple and cherries.
Bake at 350F degrees. When the cake is done, loosen the edges with a butter knife. Remove from heat and allow to sit five minutes, then turn it upside down on a serving dish.
Optional: Instead of using a cake mix, you can prepare the batter from scratch using the recipe below, or any recipe for yellow cake.
Scratch Cake:
1 cup flour 1 teaspoon baking powder 1/2 teaspoon salt 2 eggs 2/3 cup sugar 1/4 cup milk
Combine ingredients and beat 1 minute. Pour batter over pineapples and cherries (same as above). Bake at 350F and follow same steps as above. Submitted by: CM
