Since my wife has been on a health kick lately, I cooked 'em up the quick, easy and healthy way.

Besides, it's too dang windy to fish! frown

1)Spray a little PAM Olive Oil on the pan and a little on top of the fillets.
2)Sprinkle a few Italian bread crumbs on top.
3)Add a dash of Saltgrass 7 Steak Seasoning.
4)Preheat oven to 450, and bake for 8-10 minutes
5)Boil up some brown rice.
6)Throw a little mixed veggie bag in the microwave.

Start to finsh is about 15-20 mintues, and it's pretty darn good!

Fried is the way to go on Crappie (Sorry but it just is).

Others - White Bass / Stripers /Hybrids and Blues do work on the grill or baked or blackened (with a host of other fish from our salt waters) - but Crappie - they really should be fried (I like them fried and cold - the next day better than coming out of the fryer).

Baked or grilled - they Suck flame

I like mine fried....best, but, I just ate some pan fried and they were great.

Put 1 tbl spoon of bacon grease in skillet, heat, add 1 (small) fine chopped onion, place seasoned whole fillets on top of onion, cook about 5 min med heat, turn and cook 5 more min. onion should be browning by this time.

They are great.

I don't care what anyone say, that looks good. I gotta cut back on fried foods, getting fat. Thank for sharing will have to give it a try, of course I have to get out there to catch some first.
