the fridge??? hmmm, if they've been wrapped up air tight, or have been in a covered air tight container, then they're OK. but if they've just been sitting open in the fridge, i wouldnt' eat them. if they were in the freezer, they'd be perfectly fine.

after 3 days, they go in the trash if I havent had time to cook them. i hate waste, and usually wont thaw anything out until a few hours before cooking.

I had an old man tell me a long time ago that a refrigerator is never cold enough even overnight for fish....doesn't mean they are spoiled but they may lose top quality taste...He always suggested that if you need to store fish in a fridge, even for overnight, pack them in ICE and do not let them sit in water.

I have NEVER had fish spoil on me, using his advise.

I can assure you that the fish you buy in the grocery store have not been handled as well as you are handling these. You should be fine.

They should be okay, but don't wait too long or they will spoil.

I soak mine overnight in buttermilk with some season all salt, various seasonings, and a handful of ice or two. I try to keep my fillets right on the brink of being semi-frozen. I also like to poke a few holes in my fillets to get some of the buttermilk and seasoning into the meat. Not to toot my own horn but EVERYONE who eats some of my fish swears it's the best fish they have ever eaten. I like to use lots of onion powder, garlic powder/salt. About 65% corn bread mix to 35% flower. Add the onion and garlic to the mix. Wow, I got sidetracked, but hey free recipe, lol. Anyway...

Three days would be about the maximum I'd be willing to go. Just keep ice on them and you'll feel better about leaving them unfrozen. I'm always paranoid about getting people sick. Funny thing is I'm the only one who ever gets sick. I think it's all psycho-semitic though smile.
