Well going to pull an all niter today. Was going to smoke it Saturday nite for Easter Sunday dinner. But they are calling for rain on sunday. So decided to have Easter on Saturday instead Getting ready to put this bad boy in the smoker around 9pm, and hoping it be ready by 11am.

Been cooking since 9pm last nite just a couple of more hours.

I did the exact same thing last Friday. I made setup change to my smoker and wanted to try it out.

Just threw 2 packers on the smoker about 15 minutes ago. I guess that I will have to put em in the fridge for tomorrows lunch. Already hungry!

I started my pecan smoked brisket yesterday @ 7am finished @ 5pm

Marinade:
Claudes Brisket Marinade
12oz Dr Pepper
12oz beer
1 tbs Garlic powder
2 tbs hot sauce
put in frig for 12-24 hrs

Apply Atkins brisket rub & put it on the Smoker using Pecan wood !

I decided to try something new on my smoker for easter.I have been smoking pork butts lately and making pulled pork but I decided to try a ham since it was easter.They turned out great after smoking them at 250 degrees for 4.5 hrs.
