Freshwater drum are very cool fish! Fun to catch, native, and quite tasty.
Albert, one of these days I've gotta cut some of those rocks out, I always forget to do so when I'm filleting them. Where in the head are they located? Or, what's the best way to cut them out?

We catch them pretty regularly at stillhouse dam using worms and minnows. I have also caught them using crawfish; but the bite is usually pretty slow.

Or, what's the best way to cut them out? just cut right down the middle between the eyes ... they are about in the middle of the head, seems like the knife will cut right between them ... been awhile since i cut some out some people say they have got to be some kind of bone ... must be a rock bone

Cool Albert! Thanks for the tips. Next time I catch some big drum I will fry them up and see if I can't cut out those rocks! Been wanting to try that out since I first heard about them.

I think most, if not all, fish have the otoliths; they have to do with the fishes sense of hearing if I remember correctly. They are calcium deposits similar to, say, an oyster's shell. Here's more information: http://en.wikipedia.org/wiki/Otolith

My buddy caught one last august fishing with shrimp on the bottom near the Barton Springs inlet on Lady Bird.
It's more than the catfish would do.

Thanks for the replies and pictures. Glad to see I'm not the only one who like to catch them. As for the stones (otoliths): When we were kids we would have pop-pop drill holes in the stones and wear them. I used to eat lots of drum.. I'm still alive and well. These days I don't eat drum, truth is I'm just too damned lazy to clean them so I catch & release now and buy a fish sandwich.

I used to eat lots of drum.. that was the plan when we saved all those up ... we was gonna make a necklace for mamma ... i have eat a good number of drum but not any in the last 15 years ... the main reason we ate the one in the pic is cuz my son would not have it any other way
