Anyone else ever make their own cheese? I've been making ricotta now for several years. I got my stuff together and am going to make some mozzarella here soon. Also have goat cheese on the to-do list.

Anyone know of a good DFW resource(store) for cheese making? I think I'm going to need help on the next few.

Don't know much about makin cheese but I have been known to cut it every now and then woot bolt

I have a foodie book from central market for the hollidays. I was hoping they would have a class this season for buffalo moz. I wanted to learn how to pull it. I love that stuff. I go there everyday for lunch. ill ask them tomorrow if they are having any chesse classes for ya Brad.

I know Paula Lambert at The Mozzerella Company does an occasional class. I've been thinking of trying out one of those. For those that aren't familiar with her place, it is down in Deep Ellum and she makes some of the best cheeses around these parts. Here is the website.
