Here are two ways I've been fixing them for years. First one you mix up 1/2 tsp. of garlic powder, chili powder, and salt together. Rinse hens, pat dry. Split in half. Sprinkle both sides with seasoning. Grill over med. coals for 45 mins. Turn occasionally. Combine 1/2 c. apple jelly , 1/2 c. catsup, 1 tbl. vniegar, and 1/2 tsp chili powder. Melt in small saucepan. Brush hens with sauce and grill an extra 15 to 20 min. Turn and basting often. This is for 4 hens...Second one is for 2 whole hens. Remove giblets and rinse with cold water and pat day. Combine 1/3 c. finely chopped parsley, 1/2 tsp. salt, and 1/4 c. butter. Smear the parsley mixture into the cavity. Place hen breast side up in a shallow pan. Rub outside of hen with 1/4 c. butter. Bake at 375 for 30 minutes. Combine 1/2 c. red currant jelly and 1/2 cup brandy in a small saucepan. Cook over low heat, stir often until jelly melts. Spoon one half of the jelly mixture over hens and bake another 30 minutes. Baste every 5 to 10 minutes with remaining jelly and drippings...I usually just do the rice on top of the stove with pecans and seasonings thrown in.
