A meal in a potato.
I came up with this in the old days when pots and pans were scarce

1.)Bake a potato
2.)Cut the tip off
3.)Scoop out the patato/save it
4.)Fill the potato with whatever you want/hamburger,cheese
5.)Put it back in the oven a while until it's cooked

That may have worked in the old days when potatoes had thicker skins. It is darn near impossible to find a potato that you can scrape out the potato and have an unbroken skin.

Well, since I now have pots,pans and dishes, I haven't made em in a while, but I didn't really notice potato skins getting thinner.

Well I remember Mom's baked taters. use to cut the tater in half and dig out the insides and fill that skin back up with butter. Can still feel the hot butter dribbling down my chin when I bit into the tater skin.

This will work if you bake the potato in the oven without wrapping it in foil. TRhe skin will dry out and the potato just under the skin will get harder. It makes a real nice crust for this recipe. My 2 cents.
