This one of yours is cool. I actually prefer un-edited shots because you are trying to capture the moment of what you saw and felt. I agree...where are the enhanced pix you were describing?

How about this one..............unedited.   Quick Edit.. Sometimes you need just a little bit of color to really make something snap. Also, camera's don't capture images like you saw all the time. Tones, Shades, gamma, noise, iso, etc, all have an effect on the final image.

I took this photo of my buddies fishing clear lake on the LBJ grasslands... 2005. The only editing I did to this was an effect that made it look as if it had painted with water paint. The colors are all natural though. The reflection of the sky on the water is what I like best.
