Where are you located?
When I don't play around any and don't be TOO meticulous, I can usually have a crappie or small bass cleaned in prob. 30 seconds or so...and I do it manually.
But...I tend to play around too much, making sure to follow the bones as closely as I can...still can do 'em pretty quick.
No fish is too good for the grease.

I use an electric. Never timed it but it probably doesn't take me more than 30 seconds. I cut in behind the gill and fin at about a 45, run down the bone, leave a little bit of skin, flip fillet and cut it right off the skin, flip fish and repeat.

I fish bob sandlin from the state park pier. (don't have a boat and its 11mi from my house).

For me to clean Sand Bass about 45 years. But I'm still working on it. That's a lot of scrubbing with soap and water. I've never timed it. I don't think I'm fast or accurate for that matter. Maybe there is a ratio to the number of beers on hand vs the number of fish that have to be cleaned.

American Angler make a decent fillet knife if you get the MT version--it does get REALLY hot when filleting larger fish--reds, stripes ect. Never really had a problem with it on sandbass though. Academy has a good return policy so if it does burn up just keep you receipt and they should exchange it for you.

the guides up on Texoma swear by the old Sunbeam electrics. You have to get them at garage sales now. They say they are by far the best. They also install and replace the new Rapala blades frequently. Supposed to be far better than any others.
But I know an old man down on Cedar Creek, ex-butcher, who'll be glad to race anyone. He uses an 11" Rapala filet knife. He can beat most with an electric.

Find a saltwater version of the American Angler, and never get one with rechargable battery.

The most i've EVER been impressed about was a friends mom that'll fillet a sand bass WITH the rib cage meat and NO BONES!

With old sharp fillet knife, about a minute, but if I'm careful about two minutes. Mostly crappie and whitebass.

The way everyone is describing is the best with an electric, but do what the guides say, do not use an expensive knife from academy or basspro, go to walmart and buy a 12 dollar knife, it will work just as well, I have the american angler and do not like it at all, will be going to walmart soon.

Hm, I can fillet a sandbass in about 30 seconds with my manual fillet knife, but by the time I've gotten to fish #20 the time is more like 2 minutes.
You'll get better with practice - and five minutes is great as long as you only filleted the fish and not your fingers!
