Hey all...
I remember getting a spicy batter for pan fried catfish filets on here at some point, but can't find it.
Help!?!?!?

I make spicy fried catfish fillets sometimes by just adding Tony Cacheres Creole seasoning to my batter. Tastes great.

My Grandpaws receipe, thaw fish, pour 1 bottle of Crystal hot sauce in bowl (not tobassco) coat good, then toss them in the cornmeal and then into the oil. Use 1 part flour to 3 parts cornmeal with 1 tablespoon of salt and pepper each per parts of meal mixture. Fry at 350 until golden brown or until they just begin to float.
I cook all of my fish this way when frying.
Some folks mouths, flat out runs their minds.

I make a glaze out of frenchs yellow mustard and mix in cyrstals hot sauce till it discolors it. then batter with cornmeal.

I will add Zatarains Shrimp $ Crab boil to my frying grease to give it that zesty flavor. If my wife is eating with me then I cant add too much or it will turn her off but when the MEN eat then I add quite a bit of it for a real zesty taste.
