1/0 or 2/0, I like the thin wire hooks, the thick ones can kill the shrimp quicker.

i use a 2/0 Mustad Croker Hook

sorry to stray a bit, but how do you hook the Gulp plastic shrimp? Same as a live shrimp?

Just like you would worm fishing or any other soft plastic. Depening on the size of your gulf and jig head you want to run the shrimp about 3/4 - 1 inch starting at the head and bring the hook out of the side.
