I need your best Axis Hamburger recipes. I have a frezer full and dont know what to do with it. The one time I tried to make hamburgers out of it it was too gamey and did not taste very good so I havent done that again. I'm no chef so the simpler the better.

Chad,

May want to try mixing the axis with some ground chuck, the fat in the beef may help with the gamey taste.

Or fine chop some bacon and mix that in. Adds some flavor and fat a a pretty lean meat.

Just wondering how the Axis was processed,because I have had several and have found them not to be gamey at all.The hamburger was excellent,better than whitetail I thought.I have a friend that processed it,mabey what I got was an exception.Just currious.

we did it our selves. Our family does a dozen or so a year i guess. Maybe gamey was not the right word, but just was not a favorable taste for me.
I've received a couple of tips I hope to try again in the next few weeks. but the meat alone without additives I would not like I dont think.

Let me say I was "raised" on fried deer meat and is one of my favorites today. I just cant eat fried foods anymore.

Gamey? Axis? Hmmm I eat on average 3 Axiz a year and they are not gamey at all. Axis is sweeter then whitetail and I prefer it over whitetail. As a matter of fact the last cook out we had I made some Axis burgers no other meat mixed in and served it with just salt and pepper and little garlic. People who would never eat deer meat were telling me that was the best burger they ever had. Too funny. I am not sure how your family cleans deer. And I am not saying its wrong but I will tell you this I have never had Axis meat that tasted gamey.

Recipes I would say try adding some ground beef to it. Deer meat does not have alot of fat in it. And for your case try doing 50 50 and that should help with the gamey taste.
