No wrap. spritz with acvinegar/water and spray butter. Pull around 192. This, I am done with wrapping

i cut some individually apart before cooking last time. seasoned and put in pan and smoked came out really good

I donโt wrap but I do smoke them at 225 for 6 hours then finish in a covered aluminum pan with apple juice. Fall off the bone.
Membrane removed btw The time is wild to me because I cook baby back ribs at 225 for 3 hours and they are always done!! I did them for 3.5 hours for the first time on the pellet grill, they were so under done I had to cook them in the oven for two more hours

-3-2-1 method all the way. Bbq should never involve time.  I agree. Each cook is different. I do wrap sometimes but not always. Sometimes I just go with a dry rub only and other times I will add my BBQ sauce of choice the last 20 mins or so of the cook. I am never stuck on one technique.

I prefer St. Louis style ribs... Normally a half rack at ~250* for 3 hours... Then I'll wrap them in foil, pour a little beer on them for another half hour... No one has ever complained... Dan
