We’ve been low carbing for over a year and a half but today for Mother’s Day, my wife declared she wanted a baked potato with the steak. OK, great. I’m in.
I must say the potato was special but I liked that buttery potato peel too, very much.
Do you eat the peel?

Sometimes I do- Especially potatoes from Texas Roadhouse

Rubbed in oil with salt the peel is Delicious.

I use to eat the peel on a baked potato, but I haven’t in a long time. I love potato skins though, cheese bacon onion sour cream.

I haven't skinned a potato in forever. I always leave the skin on. The skin is one of the more heather parts. Minerals and such. Brown skin potatoes.
Only deal, you gotta scrub them. I usually soak the dirty potatoes in water and then scrub them under running water until I know. I'm not going to be chewing grit. Eating dirt.
They say in the culinary world. Don't soak potatoes in salt water for long. It changes the texture. Yeah...The skin becomes more chewy. So now I soak my potatoes in salt water. Keep them in the fridge.

All the potato talk. I'm going to do mashed potatoes tonight. Skin included. Make enough for a couple meals. I get the big bag of potatoes from ALDI. I despise letting food go back.
I go through a bag or two a month. I eat a lot of potatoes. In between, it's corn, sweet peas, broccoli, mixed veggies. But my main diet, I can go through the potatoes.
I don't skin nothing. I enjoy the flavor of the skin. It's the best part.

I normal don’t eat the peel, and prefer it wrapped in foil to cook. But if you do like the peel, clean the outside of it really good, like scrub it, oil it on the outside and cook it with no foil wrap, get the peel crispy. My son likes it that way.

Cut the in half, rub with sea salt and olive oil. Smash them into a muffin pan and cook. About ten minutes before done, throw some cheese and bacon on it and let it finish.
