Yes the heads are still on them. I used to cut them off until I got married. My wife is from China and prefers to have the heads left on. Other than filleting catfish, crappie, and White Bass, the heads stay on. I do cut out the gills. I personally think the fish taste a little better with heads on! Just my Side Note: She prepares and cooks fish very well!

I took my son fishing behind PK dam 40 years ago for Rainbow Trout. I didn`t realize there was a 5 fish per limit until a guy across the river hollered and told me there was a limit. I waited about 5 minutes, gathered up my stuff and left. That guy probably saved me a ticket. ![[Linked Image]](https://texasfishingforum.com/forums/pics/userpics/2025/04/full-22783-264924-1a213d0904b6c24a43473a66102dfe3d.png)

Those look good Chuck. Do you have the recipe? Side Note: I have been putting some of my trout in the smoker. They turned out great!

Thanks Curtis. The wife can really cook up some meals. All of them are fantastic! She must have over a hundred different ways she prepares and cooks fish. Here is what she told me about her recipe. She used Vegetable Oil, Ginger, Onion, Garlic, Yellow Bean, Table spoon of sugar, and Jalapeno Peppers. She soaked them for about an hour. Side Note: She also bakes a very good bread loaf.
