We reverse sear our steaks first. Used the oven, off side heat on the grill, but no water bath. Then sear the heck out of it. Again, doesn’t matter the method gas, charcoal or cast iron sear. Mommas always happy and that makes a happy life! cheers

Caste iron, especially NY strip. On a grill I like it over open wood fire, especially a ribeye. And always get prime. I love this little grill, take it with me every where traveling.

The best steak cooking device I've ever seen is a "Pachanga Barrel". It's the spin tub out of a washing machine. You fill the tub with cut dry mesquite limbs and light the wood. You let it burn down to coals and place a grill on top of it. Then you cook your steak on it. It's one fine searing sum biatch. It draws air through the holes in the spin tub...

I did a combo on the pellet grill the other day. started on the skillet, finished on the grill.
