Subjective question out of semi-idle curiosity.

What makes the better steak?: a griddle or a grill?

I’m going to shake this place to the core right here right now……I use a stainless frying pan and hot seer our steaks. Tried every other method (except boiling) and it’s what we prefer.

Grill is my go to. The griddle doesn’t get hot enough

I grill over charcoal and wood but sometimes pan sear over charcoal and wood. A cast iron pan will get more than hot enough to sear a great steak. Never used a "skillet".

A grill but you can make a good steak on a griddle, it is Similar to cooking one in a cast iron skillet, about the only thing I care to cook on a griddle is burgers and breakfast.

I like it both ways. If I am inside, I use a cast iron skillet to sear and finish it in the oven. Otherwise, I use the Weber outside. Both are great, just different.

It depends on the person eating the steak. IMO, charcoal grill is the only way to go. Has to be charcoal; grill with gas is a sin.

As long as it's not over cooked or covered in sauce, I'll eat the steak and be happy.

Purchased a griddle insert for my Weber grill. No contest, griddle, griddle, griddle. Crusty on the outside and perfectly cooked on the inside (and soooo juicy)
Have you ever had a steak at a Sushi bar. MMMMMMMMM they are outstanding and cooked on a griddle.

In fact, the cooking recipes for a griddle are endless and oh my they come out tasty. Fun way to cook and the cleanup is a snap.

Griddle all the way!

I’ve been using this method for a few years and the steaks are as good if not better than Perry’s

The reason I set this up is because I cook them with that skillet so hot it with smoke the whole house out.
