We bought this Prime tri tip at HEB on sale. Today I trimmed it a little, dosed it up with Obie-cue Steakmaker rub, put it in the egg for two hours then seared it. If you see these on sale, try one. Delicious. ![[Linked Image]](https://i.postimg.cc/xjMDSz8k/IMG-2151.jpg)

I picked one of those up when they were on sale also. Never cooked one before. What temp on the egg? 250°?

I picked one of those up when they were on sale also. Never cooked one before. What temp on the egg? 250°? Bingo. After the sear, wrap it in foil for 15 minutes. Dang.

That is one of my favorite cuts of meat. I cooked mine on a PK offset then seared. I look for them every trip to HEB.

This is the one cut of meat that I have never cooked or eaten. In my 26 years as a meatcutter/ mkt. mgr. it is also the one cut of meat I sold the least. I`m sure that has changed since I changed careers in 2006. With the influx of Californians into Texas  , the cut will only become more popular. I can remember asking every person that asked me if we sold Tri-Tips if they were from California. This is going back to at least 1984. Every single person that ever asked for one WAS from California. They always seemed surprised that I knew where they were from. What they didn`t know was that no one from Texas knew how to cook a Tri-Tip or that the cut existed. Dang. 250 on the egg for 2 hours How did you sear it? skillet or turn up the egg or something else? Thanks for the advice/tips - that looks freaking awesome

I had one customer that would order a case of tri tips a couple times a year. Always had the impression he was from Wisconsin. He smoked them for bbq. To me, it’s a steak primal. Sort of like the flat iron from a shoulder clod / teres major.
