Has anybody grilled any of these?
I saw some in HEB the other day. It looks like they took a pork butt and cut it into steaks (about 3/4" thick). Each one was about a pound.

Could be a might chewy grilled. Baked or smoked probably better

Smoked at 275 is the way to go. Practically the same thing as country ribs (pork shoulder cut into thick rectangles)

Marinate them in apple juice, wostershire sauce, soy sauce and garlic. Then grill over charcoal. Grandpa used to do that often and they were great.

Those steaks are great. Different than country style ribs. Not even like a pork chop. Just a different to present it.

Let them sit out for a couple hours. Then hot and fast over briquettes. Pull at 145 then rest. Perfect with just salt and 16 mesh pepper. Or do in the oven with cream of (whatever you choose) sauce in a pan. Great that way too. I just started buying bacon cut in 3/8 slices and smoking them at 180 with just a applewood rub. Those are so freakishly good. ![[Linked Image]](https://texasfishingforum.com/forums/pics/userpics/2025/03/full-114940-262270-1000005744.jpg)
