Used to power wash sandbass filets in a bucket.

No on crappie and bass filets. Just rinse, bread with cornmeal and hit the grease.

Mix 1 cup of of flour, to 3 cups of yellow cornmeal, add 3 tablespoons of salt and 1 tablespoon of black pepper. Soak filets in Crystal hot sauce. Toss filets in cornmeal mix, then fry at 360 until they just begin to float.

That was my Grandpa's recipe and we still use it today. If you step it back a notch, you would throw a kitchen match in the grease and wait on that sucker to fire off letting you know the grease was ready. cheers

I use buttermilk with some Tony Chachere's in it. Soak overnight.

Nope, I mix cornmeal and fish fry 50/50 and add some coarse grind pepper and Tony Cacthere. Crappie and cats go in mix dry.

How I do it is Don’t soak in water. It takes the oil out of the filets and can make them mushy.
If they are fresh, I rinse them and then pat dry with paper towels
Have the peanut oil set to 360.

Dip the filets in egg beaten with beer or milk.
Then into a two gallon ziplock with orange Louisiana corn flour with salt and pepper to taste and drop the filets in a few at a time, shake good and then onto paper plates to make a batch in the hot oil with out over loading. Too many at a time is not good.

Also don’t let them sit too long with the meal on them. Into the hot grease and don’t crowd too many at a time. Less is better than too many.
When they float they’re done. If the filets are from big ones, I slice them in half so they don’t take forever to float.

Out of the grease and onto paper towels and eat them while hot.
If you like spicy use the blue Louisiana corn flour and add salt pepper and whatever spices you like.
Same if frying bluegill, red ear or other sunfish.

I like a lot of different fish but these are my favorite.
