Now that's its readily available again, do you think it tastes the same? I think its close but slightly different as is the color.

I like variety and have found that I like three or four others also. Have you tried yellow bird blue agave? Its very good. All of the Yellow Bird brand stuff is good. That is my favorite schirracha.
