Round Tip

Also called a beef knuckle. This guy does a great job of breaking it down into different cuts (also known as merchandising) for more profitability.

I’d go about 8 more degrees for my taste.
I grew up eating round steak fried in a skillet to dry and grey throughout.
My first taste of medium rare was in BoyScouts cooking stew meat on a stick over wood coals to medium rare on the inside. I couldn’t believe the great taste i had never had before! I didn’t dare ask mom to cook my round steak to that level. We ate it the way she cooked it. Things changed when I went to work at Piggly Wiggly. The butcher liked me and made me some good deals on ribeyes from time to time and I would clean and sanitize his meat locker.
I’d give anything now to watch my mom cooking those well done round steaks for supper again. angel

I like to add just a tip dunk into horseradish. So good that way. This was perfect eating. I don't think I'd go above 131 for finish temp. I was happy with how this cheap cut turned out slow smoking. Will definitely be doing again.
