I prefer it on a cedar plank on a grill.
Soak cedar plank for one hour in water (place a cup of water on the board to submerge it). Drain water and pour orange juice on the top of the board and let soak for 30 minutes.
Prepare fish: Coat with olive oil and season (kosher salt, black pepper, etc.) I use a potlatch seasoning on mine.
I cut up citrus (lemon, lime, orange) and place it around the fish on the board and grill. No need to flip the fish as it is using indirect heat.
Cook until internal temp of the fish is ~120 degrees F.

there was a recipe for blackened Mahi Mahi on an on another topic that sounded great. I'm going to cook some later this week. I'll let you know how they come out. If you want to find the recipe just do a search....

Coat with olive oil and dust with Tony Cacheres and grill. Cut lemon wedges for when it is done. Nothing better. Its good fried also.
