I’ve cooked many a prime rib in many ways. The only way to do it is the reverse sear!! Smoked or cooked low I oven to internal point and then seared is only way to go!

Tamales for us this year. I ordered 6 dozen from a person I used to work with. His mother and sisters make them several times a year. They are great. When I managed a meat market (Winn Dixie & Brookshires) until 2006, we didn`t sell that many prime rib roast because we didn`t put them on sale for cheap. Our steak sales definitely increased and lots of seafood (mostly shrimp). Weekly sales usually increased by 50% or more. The supermarket chains that sold the most prime ribs were the ones that ran them on sale at a low price. Like I always said........ It`s not hard to sell dollar bills for 50 cents.

We are going to smoke a prime cut prime rib roast.  This will be the 4th year in a row.  I went prime on mine --- you talked me into it, why not it just freaking money (holy chit man) I better not screw this up!!!

We always do tamales for Christmas. Same for this year though I'm tempted to have ribeyes. The company that processes all the steaks for Outback and other places have each of us a box of 56ea ribeyes. These are prime and vacuum sealed. Probably last us a good while. Hell of an unexpected gift.

Thanksgiving is our holiday to have fun food. This year we fried fish. Christmas is always traditional so we have to have a stupid turkey. I’m going to smoke it so it is guaranteed to be dried out and raw at the same time. Spatchcock it. Won’t dry out and won’t be raw. Smoke turkey is my second favorite way to eat it behind fried and I don’t really like turkey but it can be made decent.

Just bought $200 of prime rib roast. Garlic mashed potatos, corn on the cob, salad, and fresh baked rolls. Top it off with cheesecake and BlueBell!

Rib roast on the smoker for me. I usually rub my down with olive oil and use a dry rub that I get from HEB. Smoke until internal temp is med rare and let it rest. For sides, I like pan frying brussel sprouts mixed with bacon bits but this year I am thinking about cabbage mixed with sausage.
