how do you store ripe tomatoes?

is there a simple way to can them or water / bath them?

not pickled, to use in my wife's spaghetti sauce etc

Can them. Mason jars.
Make the sauce just like the store. Canned. Or just plain tomatoes. You'll need a pressure cooker and a case of jars.

Wash them and let em dry, put on a cookie sheet and freeze them for several hours, then bag them and freeze them using a vacuum sealer to get out almost all the air. Then when you want to make hot sauce, you pull out what you want, thaw and they peel really easy.

You don't have to freeze them first with the chamber types. Still doing my research on which one I want to get.
