The best one is which ever one you have on hand and is working. I have only used corded electric knives and they all work good. The often overlooked ones are the old electric bread slicing knives. those will do a good job till you can get a better one. I like the American angler one i currently keep on the boat locked and loaded but i keep a Mr. Twister electric knife on stand by just in case my American angler knife give out. Hit up a garage sale or two you might get luck with one of those bread slicing knifes to get you by until you order a better one. But i will warn you those bread knifes do such a good job you might just start hoarding a bunch of those since you can normally you can get them for pennies used.

The best economical electric knife I have used is the Black and Decker electric knife from Walmart. They have gone up some in price from $8.95 (currently $19.96), but still a great value and will clean a variety of fish. I have cleaned many sharks over 150 pounds with them.
For a quality electric knife the American Angler Professional is one of the best ones out there. They come with a high price tag, but they have come down from their original price. You can get one for $70 or $80.
Another great option is the Bubba cordless. It is by far the most expensive, but a great knife when electricity is not available. They currently run about $169.
I have had bad luck with many of the electric knives commercially sold as fishing knives.

After watching talking to a guy people fishing at Port O'Connor use to call and come clean fish for them who was using a Bubba cordless, how much he liked it, and how long he had been using it, I bought one. It is expensive, but I have been more than happy with it. It comes in a case with several blades. I use it for the initial fillet, then use my old commercial boning/fish knife to do the trimming. I used to just use a couple non electric fillet knives, but I am usually filleting 25 to 50 catfish at a time these days. I had tried some of the cheaper corded electric knives before, but the motors always burnt out in them sooner than they should and I seldom had access to a plug where I was. I doubt anyone could convince me of a better knife for my purpose right now.
