I ain't even a southern man....Toss it out for the nature ninjas....re do, and put it all on you. And NO brisket is not overated. It has so many options to use after smoked. I'm just a westerner but can smoke these to perfection every time. BGE or RecTec. Obviously BGE is better. But both are great.
